At around 2 am, Nathan and I were still awake because Jackson was snoring. Since we couldn’t sleep, we decided to walk to the Trevi Fountain to see it without the crowds. I’ve always wanted to do this.

To my surprise, there was still people there! But very few.

I was hungry so we found a bakery that was still open and I had a brioche filled with cream and strawberries. Yum.

When we got back, I was finally able to sleep for a short while.

In the morning, I paid for an Uber for the three of us to the airport because I am not going to deal with Roma Termini again. We got some breakfast – I had a panini with mozzarella and tomato, and waited for Kaitlin. Once we were all reunited we went through security and did some last minute souvenir shopping. While we waited to board our flight I got some snacks, had some pizza and played Comptine d’une Autre Été on a piano.

I slept for most of the fight, which is rare for me. I was feeling pretty buggered after the events in Rome. But I did wake up for the meals, which were pretty good. Well done West Jet!
In Calgary, we said goodbye to Nathan and Jackson, and then we were on our way home.

This was a trip of a lifetime and an extremely valuable learning opportunity. I have learnt so much from my time at Castello Sonnino, and from the professors and other students that came along. I have learnt a lot that I didn’t expect too, like cooking tips from the culinary students. I am so grateful that I had the chance to attend this field school, and I think we are really lucky that everyone on the trip got along so well. Everyone was so present and keen to learn, which made the experience even more special.
I will be missing Montespertoli until I can return again.
